Apricot Chicken

Apricots are delicious!  They are one of my favorite fruits.  They are currently not in season but I love apricot preserves on toast for breakfast.  They are in season from early May to July.  Fun fact: About 95% of the United States fruit comes from California- so you can consider them a semi-local treat. 🙂  

Chicken is really good too, and it is my main favorite meat for dinner.  I was happy to discover this apricot chicken recipe recently.  You make it in a slow cooker.  For the ingredients I used 2 packages of boneless skinless chicken thighs, a pinch of salt & pepper, 1 cup of apricot preserves, 2 tablespoons of coco aminos, 1 tablespoon of dijon mustard, and 1 teaspoon of powdered ginger.  Before I put the ingredients in, I sprayed the inside of the slow cooker with the original Pam spray.

My family and I love this recipe.  The combination of the apricot flavor and the chicken is really yummy.
