It’s Fall….It’s Time for Pumpkin Spice!
I love pumpkin spice lattes and there’s nothing like pumpkin bread too. I’ve got a great gluten free pumpkin bread recipe that disappears quickly at my house.
1 cup pumpkin puree (I used Trader Joe’s organic canned pumpkin)
1 cup sugar
1/4 cup brown sugar
1 tsp. vanilla
1/3 cup vegetable oil
1 1/2 cups gluten free flour (I like to use Cup 4 Cup)
1 tsp. banking soda
1/2 tsp. baking powder
1/2 tsp. ground ginger
1/2 tsp. cinnamon
1/2 tsp. salt
1/4 tsp. of ground nutmeg
1/4 tsp. pumpkin pie spice
Preheat oven to 350. Prepare a 9×5 loaf pan with non-stick parchment paper or if you want to make it easy, use these:
In a stand mixer, mix together the eggs, sugars, and vanilla with the paddle.
Add in the pumpkin and oil.
Then add the dry ingredients of flour, baking powder, baking soda, cinnamon, ginger, salt, nutmeg, and pumpkin spice.
After the ingredients are combined, pour them into the lined loaf pan. Bake for about an hour, or until a toothpick comes out clean. When you take it out of the oven, let it cool for 10 minutes. You will have to work hard to keep everyone away because it smells so good. Then slice and enjoy!
